Crockpot Lasagna

Crockpot recipe #10 is Lasagna.  I love this lasagna because you don't have to cook the noodles beforehand!  It's pretty tasty too.

Crockpot Lasagna
Ingredients:
1 lb. ground beef
1 onion, chopped (I use 1/2 cup frozen onion)
2 medium carrots, chopped (I used a can I had on hand)
1 Tbsp garlic powder
1/2 tsp. salt and pepper
1 can (6 ounces) tomato paste
1 can (28 ounces) crushed tomatoes
9 lasagna noodles, uncooked
2 cups shredded mozzarella cheese (1/2 cup will be used when serving)


Directions:
Cook ground beef on the stove
Add in chopped carrots, onions, garlic powder, salt and pepper
Stir in tomato paste and crushed tomatoes
Remove from heat
Spoon 2 cups meat mixture into bottom of the crockpot
Layer 3 noodles over the meat mixture (you can break them to fit)
Then layer 1/2 cup of cheese
Repeat with 2 more layers (meat, noodles, cheese)
Cover
Cook on LOW for 4-6 hours

*Sprinkle remaining cheese on top before serving

I serve this with salad, veggie, fruit and Texas toast.  It's really good leftover.
