Crockpot Zuppa Toscana (Potato Soup)

I'm linking up with Kelly again and doing a bonus crockpot soup recipe!

Crockpot recipe #7 is Potato Soup.  This is good way to warm up on a cold/dreary day.  And it's very much kid approved.  My two kiddos love it!  I like to make it with grilled cheese and a side of fruit.  Tastes similar to the Zuppa Toscana from Olive Garden.

Crockpot Potato Soup
Ingredients:
1 lb. Italian sausage (I used Italian sausage links, next time I'm going to try ground sausage)
2 large potatoes cut in 1/4's (I leave the skin on)
1 large onion, chopped (I used 1/2 c. frozen onion)
1/4 c. bacon bit
1 Tbsp garlic powder
2 c. kale (or spinach)
16 oz. chicken broth
1 c. heavy whipping cream
1 quart water

Directions:
Brown the sausage in pan or warm up sausage links in the microwave 
Place cooked sausage, chicken broth, water, onion, potatoes, bacon bits, garlic powder in the crockpot
Cover
Cook on HIGH for 3-4 hours or LOW for 6-8 hours
Make sure potatoes are soft
Turn the crockpot off or on warm
Add the Kale or Spinach
Add the heavy whipping cream
Return the lid and let "simmer" for 5-10 minutes

-It has a little more prep time, only took me about 10 minutes

Yummy to the tummy!
