Crockpot Chicken Cordon Bleu

Crockpot Recipe #5 is Chicken Cordon Bleu...or as I like to call it....Cheesy Chicken.  It is really good and very filling.  It's good paired with rice. We in our house also like it with something green on the plate.  Well, I like something green on the plate.  The other 3 could do without.

This recipe may look long, but it doesn't take long to prep....

Cheesy Chicken
Ingredients:
4-6 Boneless chicken breasts (I use frozen)
1 can cream of chicken soup
1/2 c. milk
4 slices of ham
4 slices of swiss cheese
1 (8 oz) pkg dry bread stuffing mix
1/4 cup butter, melted


Directions:
Mix together the cream of chicken soup and milk
Once done, pour a small amount in the crockpot to cover the bottom
Layer chicken over the bottom (your crockpot size determines how many pieces of chicken you want to use)
Cover chicken with slices of ham and swiss cheese
Pour remaining soup (crm of chicken and milk combo) over the ham, cheese and chicken
Spread soup out so it gets in all the holes
Sprinkle the stuffing on top (I normally use half of a Stove Top stuffing box)
Pour melted butter on top
Cover and cook on LOW for 4-6 hours


This meal does have a little more prep time, but I think it only took me about 10 minutes to throw it all together.  Again, so good, filling and creamy. 

Crockpot Tidbits:
*When using the crockpot, make sure and keep the lid on the whole time.  When you open it to stir, it makes the cooking time longer.
*I tend to leave my chicken in the crockpot for the longest time.  So I would leave this in 6 hours.  I'd rather it be overcooked than undercooked.
