Crockpot Cilantro Lime Chicken

Crockpot recipe #21 is Cilantro Lime Chicken.  I'm a big fan of this recipe.  The hardest part is cleaning and cutting up the cilantro.  If you're a fan of Mexican food, try this one!

Crockpot Cilantro Lime Chicken
Ingredients:
4-5 chicken breasts
1 packet taco seasoning
juice from 1 lime
1/2-3/4 cup chopped cilantro
1-2 jalapeno chopped (without seeds)
1 jar salsa


Directions:
Place everything in the crockpot
Cover
Cook on LOW for 7-8 hours
Shred chicken

Serve in tortillas or over rice.

There's no way you can be 2 years old!?!

We love you so much little bubby.  You add a spark to our life and are becoming such a spunky, opinionated, sweet, cuddly little boy.

-You love legos.  They'll keep you busy for quite awhile.  Unless sissy comes and destroys your towers..or the dogs run off with your lego man.  Then that brings about some not so fun crying!

-You're starting to talk and mumble a little more.  Your favorite word is "ball".  You love anything that is the shape of a ball and start screaming "balllllllll" when we come in from outside playing.  You are so upset to be take away from your beloved soccer ball outside.

-You are getting some 2 year molars in which is causing some fussiness.  Chewing on everything in sight and drool everywhere!  You've started having a few tantrums as well.  You'll throw yourself on the floor or run into the couch (on purpose) and cry.  We typically leave you alone and you get over it soon.

-Wearing size 24 month and 2T clothes, size 6 shoe and size 5 diapers.

-Weighing in at 23.2 lbs and 33 in. tall.

-Napping in the afternoon from about 1pm-3:30pm and going down at night from 7pm-8am

-Your favorite toys to sleep with are doggie, mickey and jerry your giraffe

-Still not very interested in tv or anything electronic.

-Favorite foods are bananas, pizza, noodles, anything with ranch, french fries and nutrigrain bars

-Still only drinking water and milk

-You still enjoy giving your toys to Daisy...which gets you in trouble because she chews all of them up

-Still extremely cuddly and love to be held.  You'll curl up and stick that thumb in your mouth.

My God is so BIG

Madelyn is learning so many songs.  She loves to sing...good thing she does, ha! :)  Here's one she started singing last week.  I think she's learned it from her Sunday School class.  She was surprised when I piped up and started singing it with her.  She commented, "Mommy, you know this song too?".  Love my girl.

Life Update

This past week, I had ear surgery.  Ever since Madelyn was born, I've had trouble hearing out of my right ear.  It's been painful as well.  I went to an ENT shortly after she was born.  The doctor put a tube in my right ear.  It was in for about a year and did nothing.  It just hurt...a lot.  After that, I ignored the pain and hearing loss for awhile.  It started getting worse so I looked into another doctor.  I was recommended to go to a hearing specialist in North Seattle.  He did a CT on my ear (such a good idea!) and saw I either had a cyst or scar tissue by the bones in my ear.  He said it needed to be removed ASAP and should improve my hearing and pain.  He did this procedure on Tuesday and it ended up being scar tissue.  He said I must have had an ear infection sometime during my pregnancy or shortly after with Madelyn and just didn't know it.  The pain level right now isn't too bad. I go back and see him next week so he can look at it and make sure it's healing properly.  Thank you to our family, church family and friends who have prayed for this procedure and that I would find answers.  And thanks to those who have/are bringing meals in the next week.  The anesthesia has made me pretty tired. 

And here are some pictures of the babies over the last couple weeks.  Our fun (and not so fun days..ha!) have included:  trips to the playground, playing with our neighbors, going to the zoo with Tee, molars coming in for both kids (not fun!), Madelyn filling up her reward chart and picking out a special toy, dance class, shopping and eating at Target, reading books with daddy....

Crockpot Cheese Chicken

Crockpot Recipe #20 is Cheese Chicken.  Super easy and yummy.  I serve this over rice and with fruit.

Crockpot Cheese Chicken
Ingredients:
1 c. chicken stock
1 c. cheddar or colby jack shredded cheese
1 red pepper, diced
1 bell pepper, diced
3-4 chicken breasts
1/2 tsp. red pepper flakes
8 oz. cream cheese
Pinch of cayenne pepper
1/2 tsp. pepper
1/2 tsp. salt
1/2 tsp. garlic powder
1/2 tsp. onion powder


Directions:
Place chicken in bottom of crockpot
Add all ingredients except grated cheese
Cover
Cook on LOW for 5-7 hours
Add grated cheese
Cover, cook on LOW for an hour more or until chicken is tender
Done!

5K and Mother's Day

This weekend was pretty busy for us!

Friday after work, I went out with some gals from church to see the movie "Mom's Night Out".  It was really cute and fun to go out with a group of about 30 ladies.

On Saturday morning, we got up early and went down to Crista Campus in Shoreline and participated in the Free Them 5K-Fight against human trafficking.  A group from our church has been doing this for awhile, we decided to join them this year.  We had a really good time.  The kids rode in the stroller for the first 4k, then we told Madelyn she could get out and walk with Tim.  She loved it!







That night, the kids gave me their gift for Mother's Day.  We're not all together on Sunday morning since Tim has to be there crazy early so we normally celebrate on Saturday.  The kids picked out a shirt at the mall that has a superman logo and in the middle says mom.  Really cute.  They also got me a cookie cake.  They know me very well!  I wore the shirt to church yesterday morning.  Madelyn loved seeing "super mommy" (as she called me all day long) wearing the shirt she got me.  We spent some time at the playground down the street after nap time yesterday.  Such a fun day.


Crockpot Smothered Beef

Crockpot recipe #19 is Smothered Beef.  Similar to smothered chicken (recipe here).  I served this over rice and with a side of veggies.

Crockpot Smothered Beef
Ingredients:
1-2 lbs. stew meat
Can cream of mushroom soup
french onion soup mix
1/2 cup milk


Directions:
Add stew meat to crockpot
Mix up crm of mushroom soup, french onion soup mix and milk in bowl
Pour mixture on top of meat in crockpot
Cover
Cook on LOW for 7-8 hours

(if the mixture is too thick for your liking, you can add more milk)

Crockpot Chicken Philly Sandwich

Crockpot recipe #18 is Chicken Philly Sandwich.  I really enjoyed this one.  I love a good sandwich and to me this tasted like chicken sandwiches from Charley's Subs.  I served this with oven potato fries and some fruit.

Crockpot Chicken Philly Sandwich
Ingredients:
2 Tbsp. butter
3-4 boneless chicken breasts
1 large sweet onion, sliced
2 green bell peppers, sliced
2 Tbsp. steak sauce or seasoning
Cooking spray
Sliced or shredded mozzarella cheese
Hoagie Rolls


Directions:
Spray crockpot with cooking spray
Add sliced onion, bell pepper and butter
Add chicken, steak sauce, salt and pepper
Cover
Cook on LOW for 6-8 hours
Serve on hoagie rolls with a slice of cheese
