Crockpot Tortellini Stew


My friend's brother gave me a new stew recipe.  It has lots of veggies, tortellini noodles and stew meat.  Yummy combo.  It warmed up well the next day too.  You can serve it by itself or with your favorite grilled sandwich.

Crockpot Tortellini Stew
1 lb. stew meat
1 1/2  cans beef broth
1 can diced tomatoes
1 can green beans
1 can mushrooms
1 can potatoes (cut up)
1 can carrots
1/2 onion (chopped) or frozen
1/2 Tbsp. garlic or more
1 bag frozen tortellini

Place carrots, potatoes, onions, mushrooms, diced tomatoes, garlic and stew meat in crockpot
Pour beef broth on top
Mix together
Cover and cook on LOW for 7-8 hours
Add the green beans and tortellini 30 min. to an 1 hour before serving
Check occasionally to make sure the tortellini doesn't get too mushy

Stir together and you're done!

Too funny. I read this wrong. I thought it said, "My brother's friend gave me this recipe," and as I'm reading it I'm thinking, man that sounds like what we had at my house. What a coincidence!
